Vegetable Stir Fry

I love this vegetable stir fry, something light and healthy for dinner. So here is the recipe for you all to try.


Ingredients
  • Sesame Oil / Olive oil 1 tbsp
  • Water 1 tbsp
  • Brocoli 1 medium size
  • Red Bell Pepper 1, sliced into strips
  • Carrots 2 medium size, julienned
  • Celery Stumps 1/2 cup, sliced into strips
  • Ginger 1 tsp finely chopped
  • Garlic 2 cloves, finely chopped
  • Soy Sauce 3 tbsp
  • Tomato Sauce 1 tsp
  • Lemon Juice 1 tsp
  • Salt
  • Pepper Powder
Method

In a large skillet , combine oil, water, brocoli, bell pepper, carrots, celery, garlic, ginger and a pinch of salt. Cook on medium low heat for 3 minutes.

Add soy sauce, lemon juice and tomato sauce into the vegetable mixture and stir fry for 2 to 3 minutes. Add salt and pepper and combine well. If need add little more oil and fry.

Serve warm alone or over rice or nudles or with grilled chicken.
